I don’t know about you guys, but sometimes I miss college. Jello shots were a particular thing that I found myself making/taking, and how cool we felt for putting booze into whatever we could eat. Aside from memories of my old roommate making jello shots, I vividly recall an innocent friend M taking a handful of some of my friend’s special brownies back in Webb Tower, not realizing that he chose the wrong batch, and ultimately got so sick. Ever since I was told of that story from my friend who made the brownies, I laughed hysterically for all the stupid crap we’ve all done in USC/whatever college we all went to.
Fast forward- these weeks have been quite bittersweet. It’s the end of summer, which screams “summer berries” and “end of summer party” and “hella humid and hot” (here in NYC)…I’ve also been trying to make some use of the ridiculous amount of booze we’ve been given from previous parties and weddings. I’ve learned that my favorite spiked foods (so far) include tiramisu, “drunken chicken”, seared steak with a red wine sauce, and this spiked strawberry daquiri jello shot. Yet I’m also starting an…internship from this Tuesday. I literally feel like I’m going “back in school”
STRAWBERRY MINT DAIQUIRI JELLO SHOTS
Ingredients
- 1-(3 oz) box Jello-O strawberry
- 1 C water
- 3/4 C lemon or other citrus flavored clear rum
- 1/4 C freshly squeezed lemon juice
- 40-50 large strawberries
- thinly sliced lime wedges (for garnish)
- mint leaves
