Baked Avocado Cups

Gosh, I’m at 39.5 weeks. My due date is… next Tuesday. But did you know that only ~4% of pregnancies actually deliver on a baby’s due date? That’s kind of mind blowing to me. Babies just want to come out when they want to come out, or bodies will just naturally want to bust these babies out when they want them to bust out.

I am comforted in the simple reminders that I do have to eat, and I have more reasons to stock up on figuring out what I can do with eggs and avocados since I and baby Yang (name still TBD) need the protein more than ever.  C’mon little goober! 🙂  Although I’ve been taking pilates still, my stomach has been hurting more and my pelvic joints are aching more than ever throughout the days and nights. I have no idea when I’ll get my first contraction, if/when my water will break, and when I’ll really be going into labor.

This past week overall has been a total emotional rollercoaster with excitement but also a deep disbelief (what the hell, my vag is going to somehow dilate from nothing to ~10cm and my body is going to push out a ~6 or 7 lb baby out of this hole? It’s disgustingly scary, disturbing, and nerve wracking. I had my first cervical exam and screamed like a big baby myself (I like to say it’s because I didn’t know I’d be examined up there) I can’t help but think of my friend by the pool, telling me how she doesn’t want to get pregnant because of all the painful crap that goes into labor (many women would rather not have a kid, than go through labor…) I can’t help but also think of the horror stories I’ve heard of women wanting to be thrown out of the car on the way to the hospital, or a  baby heads being stuck on the way out, emergency this and that for hours and OH how awful it is on the other side. I’ve never read so many articles but have also been so overwhelmed by these articles to a point that I’m running around in circles in between my lamaze breathing / moments of meditation. Hee, hee, hee….hoooooooooooo. I know I love sweets, but this is the time to stock up on protein as much as possible and all good things avocado and eggs… So enjoy.

Baked Avocado Cups

Ingredients

Preparation Time

Serving Size

  • 2 Avocados
  • 2 lg eggs
  • 2 tbsp chopped salmon
  • dash furikake
  • dash red pepper flakes (optional)

Directions

Step 1.

Preheat the oven to 425F.

Step 2.

Slice the avocados in half and remove the pits.

Step 3.

Scoop out 1-2 tbsp out of the center and place into a baking dish.

Step 4.

Add some salmon flakes (fresh or canned) and carefully crack one egg over the avocado.

Step 5.

Bake in oven for 18 min.

Step 6.

Sprinkle some furikake and/or salt and pepper. Enjoy immediately.
